We invite you to revisit last year’s Walking With Christ Video Series, available on our YouTube channel in English, Spanish, and Vietnamese. The series features Saint Pope John Paul II’s 1981 Message for Lent, reflections by Msgr. Stephen Doktorczyk, and students from Catholic Schools in our Diocese!

We share our Lenten experience through Culture and Faith. This video features the Vietnamese Choir from St. Cecilia Church in Tustin and the Vietnamese Center in Santa Ana.

CCOC recently attended Orange Catholic Foundation Conference on Business and Ethics. We got inspired by Father Mike Schmitz and his reflections. In one of his videos on Ascension Presents, he talks about the reasons to give in Lent. What are alms? Why must we give them? Fr. Mike Schmitz encourages us to be charitable this Lent, emphasizing how almsgiving is a foundational part of living the Faith. In being joyful givers, we imitate Christ, who became poor for our sake, and we show our gratitude for God’s grace. 

In our video, CCOC long time supporters, Vincent and Michele Cortes, talk about their experience in giving, volunteering and sharing with the local community. Our CCOC CalFresh Healthy Living Team has a great recipe this month! It's Yucatan Chicken Tacos and you only need 20 minutes to prepare it:⁠

Ingredients (Serves 4)⁠
⁠
1 1/2 tablespoons Balsamic Vinegar⁠
1 tablespoon Canned Chipotle Peppers In Adobo Sauce finely chopped⁠
1 1/2 teaspoons Garlic Salt⁠
2 cups Chicken Breast chopped, shredded, cooked⁠
2 cups Cabbage Or Prepared Coleslaw Mix shredded⁠
3/4 cup Red Onion finely chopped⁠
8 Corn Tortillas⁠
1/4 cup Anejo Cheese crumbled⁠
1 Avocado peeled, pitted, chopped⁠
⁠

Directions⁠
⁠
1.⁠
In a medium bowl, mix together balsamic vinegar, chipotle peppers, and garlic salt. Add in chicken, cabbage, and onion, mix well.⁠
2.⁠
To warm tortillas, heat in a hot skillet for 1 minute on each side. Or place tortillas on a large plate and top with a damp paper towel. Microwave on high for 2 minutes or until tortillas are warm.⁠
3.⁠
Spoon filling into warm tortillas and top with cheese and avocado.⁠
4.⁠
Serve immediately.⁠

Add color and more flavor to your tacos – mix in shredded carrots and cilantro!⁠
